Quinoa and veggie power bowls

Ingredients

Cooked quinoa

Cherry tomatoes

Cucumbers

Avocado

Chickpeas

Feta cheese

Lemon vinaigrette

Method

Prepare a batch of cooked quinoa.

In a lunch container, add a quinoa base.

Top with cherry tomatoes, cucumbers, avocado slices, and chickpeas.

Sprinkle with feta cheese and drizzle with lemon vinaigrette.

Chicken and avocado wraps

Ingredients

Whole grain tortillas

Cooked chicken breast (sliced or shredded)

Avocado

Mixed greens

Hummus

Cherry tomatoes

Method

Spread hummus over the tortilla.

Layer with mixed greens, chicken, avocado slices, and halved cherry tomatoes.

Roll tightly and wrap in parchment paper or foil.

Ingredients

Greek yoghurt

Fresh berries (strawberries, blueberries, raspberries)

Granola

Honey

Chia seeds

Method

Layer Greek yoghurt in a container.

Top with a mix of fresh berries.

Sprinkle it with granola and chia seeds.

Ingredients

Whole grain pita bread

Hummus

Carrot sticks

Cucumber slices

Bell pepper strips

Spinach leaves

Method

Cut the pita bread in half and open the pockets.

Spread hummus inside each pocket.

Fill with carrot sticks, cucumber slices, bell pepper strips and spinach leaves.

Brown rice sushi bowls

Ingredients

Cooked brown rice

Cucumber

Carrots

Avocado

Nori sheets (cut into small pieces)

Soy sauce or tamari

Sesame seeds

Method

Add a base of cooked brown rice to a lunch container.

Top with cucumber sticks, carrot ribbons, avocado slices and small pieces of nori.

Drizzle with soy sauce or tamari and sprinkle with sesame seeds.

Chickpea salad

Ingredients

Canned chickpeas (drained and rinsed)

Cherry tomatoes

Red onion

Cucumber

Fresh parsley

Lemon juice

Olive oil

Salt and pepper

Method

Combine chickpeas, halved cherry tomatoes, diced red onion and cucumber in a bowl.

Add chopped fresh parsley.

Dress with lemon juice, olive oil, salt and pepper.

Mix well and pack in a lunch container.
